
In September's Edition of The Fox Box, all of the food featured was filled with the refreshing flavour of lemon.
Most of you said that your favourite product was the lemon risotto from Just So Italian, Market Harborough. If you didn't subscribe this month, you also missed out on our recommended recipes. However, this one was so good that we couldn't have you guys missing out now, could we?
The great thing about this recipe is that it's totally adaptable. The risotto is delicious and simple on its own. It's naturally creamy but still suitable for vegans. We've left the recipe suitable for all dietary requirements but you could add parmesan shavings, prawns, mussels or chicken for an even more indulgent dinner.
Recipe for Courgette and Lemon Risotto
TOP TIP: Adjust the amount of stock in Step 4 depending on how wet or dry you like your risotto.
INGREDIENTS (for 2-3 people):
1 x Bag of Just So Italian Lemon Risotto (230g)
1 Finely Chopped Onion
1 Chopped Courgette
2 Crushed Garlic Cloves
1 Litre Vegetable Stock or White Wine
2 Sprigs of Thyme (plus extra for garnish)
EQUIPMENT NEEDED:
Medium Pan
Wooden Spoon
Measuring Jug
METHOD
Fry the chopped onions and courgette on a medium heat until soft.
Add in the lemon risotto, garlic and thyme. Fry for approximately 2 minutes.
Add 250mls of the vegetable stock or white wine. Simmer gently until it becomes absorbed.
Gradually pour in the rest of the stock until the risotto becomes creamy and tender.
Serve with a wedge of lemon and fresh thyme.
