James and Laura have over 25 years experience in the restaurant and hospitality industry. With a love of local produce and a passion for the environment they aim to share their knowledge and ethos to help independent businesses throughout Cambridgeshire, Lincolnshire and Northamptonshire grow.

James is a talented chef boasting training under the likes of Gordon Ramsey, Marco Pierre White and Raymond Blanc. As well as Michelin Star restaurants, he has been the senior chef of award winning pubs and hotels including the role as an Executive Chef Consultant with one of the U.K.'s biggest hospitality company.
His experience doesn't end with restaurants. James has also worked with events companies leading him to cater for major sporting events such as Wimbledon and Lords.
As The Fig & Fox Chef Consultant, James helps restaurants improve their kitchen operations from designing more efficient kitchen layouts, implementing better health and safety practices and engineering menus that reflects the style, branding and skills of new or established businesses.

Laura has extensive experience in the hospitality industry from village pubs to city bars, independent restaurants to prestigious wedding venues.
"I understand the fluctuations in hospitality that aren't always in other industries like extreme seasonal trade, high employee turnover and tight payroll budgets."
Her focus on people promotes customer engagement through brand conceptions and the importance of reflecting this through service, staff and product knowledge, especially when showcasing local food. She's trained and managed a variety of employees within small teams of under 10 members of staff to to larger workforces with over 50 people.
